Did you ever think that meal prep had to be boring? Think again. I’m introducing a recipe that completely changed the way I look at weekly meals: Greek Lemon Chicken with Crispy Potatoes.
This isn’t just another high-protein meal I throw into containers for the week — it’s an explosion of fresh Mediterranean flavors. The creamy lemon and oregano sauce instantly takes me back to summer, to long sunny days, simple ingredients, and food that feels both nourishing and indulgent at the same time.

Ingredients

For the High Protein Greek Chicken


For the Crispy Potatoes

800 g raw potatoes, diced

  • 1 tbsp garlic powder (McCormick Garlic Powder)
  • 1 tbsp dried oregano (Simply Organic Oregano / Bart Oregano)
  • 1/2 tbsp olive oil (California Olive Ranch / Filippo Berio EVOO)
  • Salt and freshly ground black pepper

Instructions (Step-by-Step)

1. Potatoes (Air Fryer / Oven)

Dice 800g of potatoes into even cubes.

Season in a bowl with garlic powder (McCormick Garlic Powder), oregano (Simply Organic Oregano / Bart Oregano), salt, pepper, and olive oil (California Olive Ranch Extra Virgin Olive Oil / Filippo Berio EVOO).

Air fry using a Ninja Air Fryer MAX XL (or COSORI Air Fryer Dual Blaze) at 220°C (425°F) for 15–20 minutes, shaking halfway through until golden and crispy.

Oven alternative: bake at 220°C (425°F) for 25–30 minutes.


2. Greek Chicken (Skillet / Air Fryer)

Marinate chicken breast (Perdue / Tyson / Waitrose) with lemon juice, parsley, garlic powder McCormick), oregano (Simply Organic / Bart), and olive oil (California Olive Ranch / Filippo Berio).

Air fryer option: cook in Ninja Air Fryer MAX XL or COSORI Air Fryer for 10–12 minutes at 200°C (400°F).

Skillet option: cook in a Lodge Cast Iron Skillet or T-fal Nonstick Fry Pan for 5–7 minutes until golden.


Creamy Sauce Finish

Add chicken stock (Swanson Chicken Broth / Knorr Stock Pot) and simmer.

Stir in Philadelphia Light Cream Cheese until fully melted into a creamy sauce.

Finish with fresh parsley.
